Our good friend, Joey Hockett, picked up some of our spirits during a recent visit and then whipped up this DELICIOUS chutney using our Orange You Glad To See Me? Triple Sec. He served it with pork to rave reviews, and we think it will be delightful with your Thanksgiving ham! We are adding cranberry, and it will be lovely with your turkey, too.
Here's the recipe:
INGREDIENTS3 Tbsp extra virgin olive oil
1 cup fresh tomatoes, cubed
1 onion, chopped
1 cup apple, cubed
1/2 cup dried cranberries
4 cloves garlic, crushed or minced
1 tsp dried or fresh thyme
Salt & pepper to taste
1/4 cup chicken stock
1/4 cup Orange You Glad to See Me? Orange Liqueur
1) In a skillet, heat oil on medium high. Add tomatoes, onion, apple, cranberries, garlic and fresh thyme and sauté for 5-8 minutes.
2) Add chicken stock and reduce heat to medium. Once liquid has cooked out, deglaze pan with Orange You Glad to See Me?.
3) Simmer over low until ready to serve or cool, place in a container and refrigerate.
